Artisanal, whole-leaf black teas are of the highest quality. They’re the stunning product of a legendary art, that of the skilled tea master. Black teas are of bold character and range from light- to full-bodied, with an aroma and taste that can typically be nutty, malty or sweet. The flavour profile will vary with the brewing method and even the water used, so feel free to experiment; that is part of the joy of tea!

Westerners often drink black tea with milk or lemon and/or a sweetener, and this is a perfectly acceptable choice. Low fat milk or soya milk is an excellent addition to lighter black teas, while ordinary milk suits strong black teas.

The originally green, hand-harvested tea leaves have undergone a natural process of ‘full oxidation’ after being carefully withered, twisted and rolled. The tea maker skillfully takes control of the natural oxidation process whereby the ‘juices’ in the cellular leaf structure are released, initiating a complex chain of chemical reactions.

Antioxidants (derived tannins) known as theaflavins and thearubigins contribute to the orange-red-brown colour range of black teas as well as their characteristic brightness, briskness and flavour range. These substances also combine with caffeine to create the astringent taste. By the way, if you’re concerned about caffeine, give the dry tea leaves a quick rinse in freshly boiled water for a few seconds, discard the liquor, then add hot water again to brew the actual tea beverage. More than half the caffeine should be removed this way.
