Genmaicha is a tea of striking character, a blend of natural coarse-leaf sencha and fire-toasted rice. The rice is a mix of glutinous and brown unpolished rice kernels, and the sencha is a deep jade, large leaf, first harvest green tea grown at the foot of Mount Awagatake.

This genmaicha has a glorious puffed-rice aroma with a hint of nutty savouriness. It’s mild, soothing, calming, naturally sweet and perfect after meals or any time. Sublime hot or chilled.

Genmaicha costs £4.50 and comes in 30 gram foil packs.

Use three tea cups (80ml capacity).

Put 12g (3 heaped tablespoons) genmaicha in medium-sized teapot (240ml).

Pour 210ml freshly boiled water into pot.

Steep for 30 sec.

Empty pot completely into cups, gently pouring tea a little at a time into each cup to ensure evenness.

For 2 or 3 more infusions, add more 100°C water to pot and serve immediately.
