It is the drying process and blending technique that captures the fresh essence of yuzu in an entirely natural way. Yuzu is a celebrated citrus fruit in Japan and is rarely found outside Asia. It is akin to the Meyer lemon and is known as a classic ingredient in Japanese cuisine. The rind of yuzu pairs well with this flavorful sencha green tea, and lends it a piquant breeze, with a hint of tart citrus, a floral aroma and a mellow honey-like aftertaste.

Pleasantly refreshing and sweet whether iced or hot. For iced tea, brew as usual or a little stronger, with at least a cup of hot water and 4 or 5 teaspoons of tea. Pour into a jug while straining leaves, add ice and top up with cold water to make a litre of iced tea. Garnish and/or sweeten to taste.

Use three tea cups (80ml capacity).

Add 10g (2 heaped tablespoons) sencha to medium-sized teapot (240ml).

Pour 70ml freshly boiled water into each cup. The water will drop to around 90°C.

Pour water from cups into pot (about 80°C now).

Infuse 1 min. then empty pot completely into cups, gently pouring tea a little at a time into each cup to ensure evenness.

For 2 or 3 more infusions, add more 80°C water to pot and serve immediately.

During summer months, ice cold water can be used instead: infuse 15 min. (7 min. for second brew, 3 min. for third).
