This ‘single bush’ oolong was picked from a rare tea tree on Phoenix mountain, legendary playground of demigods and fairies. It is one of only 3000 directly descended from one of the famous 18 tea bushes that have existed for 900 years in a unique, beautiful tea grove.

Each of the 18 produces tea with distinct flavour profile, of which ‘honey orchid’ is one: a reddish-golden tea, sweet and flavourful, with a subtle floral fragrance and lingering aroma of honey and fresh peaches.

The particular qualities depend also on the precise conditions of picking and processing. Individual budsets are plucked when the weather is neither too wet nor too bright, then dried in the sun, hand-massaged and processed for 10 continuous hours overnight, and in due course the semi-oxidised, lightly roasted leaves acquire their special, slender, slightly twisted and shiny appearance.

how to brew honey orchid phoenix



Bring soft water to the boil and leave to cool slightly to 95 - 98°C.

Warm the purple clay pot, pitcher and cups using some of the hot water.

If the oolong tea leaves are tighly rolled, fill the pot with 1/3 tea leaves else put 2/3.

Pour 120-140ml hot water into the gaiwan in a circular fashion to allow the tea leaves to dance in the pot.

Let the leaves steep 50sec to 1 min.

Empty the pot completely into the warmed pitcher and gently pour tea a little at a time into each warmed cup to ensure evenness.

For 3 or 4 more infusions, add more hot water to pot and adding 10 sec for each subsequent infusion.
