An alluring, milk-infused oolong from Fujian, each leaf cluster opens when steeped, releasing a liquor that is unexpectedly light and smooth given the rich creaminess reminiscent of buttered popcorn and caramel.

The creamy quality on the tongue is subtle with a pleasant sweetness, a slight mango scent and a fresh finish.

Legend has it that centuries ago the moon fell in love with a comet passing through the night sky. The comet passed by, burned out and vanished. The moon in her sorrow caused a great wind to blow through the hills and valleys bringing about a quick drop in temperature. The next morning, local tea pluckers went out to collect their fresh leaves. To their surprise, when the tea was processed it had developed an amazing milky character, which was attributed to the motherly character of the old moon.

Silky Oolong costs £4.50 and comes in 30 gram foil packs.

how to brew silky oolong

Bring soft water to the boil and leave to cool slightly to 85 - 90°C.

Warm the purple clay pot, pitcher and cups using some of the hot water.

Put 3g (1 teaspoon) tea leaves into the purple clay pot.

Pour 120-140ml hot water into the gaiwan in a circular fashion to allow the tea leaves to dance in the pot.

Let the leaves steep 1 min.

Empty the pot completely into the warmed pitcher and gently pour tea a little at a time into each warmed cup to ensure evenness.

For 3 or 4 more infusions, add more hot water to pot and adding 10 sec for each subsequent infusion.
