To aficionados of Formosa oolongs the name Lishan is instantly recognized as one of the finest examples of the high quality whole leaf teas.

At 2200 meters above sea level, Lishan is among the highest peaks of the twelve that make up the Lishan Range, one of the premier tea growing regions in Taiwan. The combination of high elevation, northerly latitude and skilled craftsmanship produced a tea this spring with a rich sugar cane quality that yields a longer, more persistent finish.

how to brew lishan oolong



Bring soft water to the boil and leave to cool slightly to 85 - 90°C.

Warm the purple clay pot, pitcher and cups using some of the hot water.

Put 3g (1 teaspoon) tea leaves into the purple clay pot.

Pour 120-140ml hot water into the gaiwan in a circular fashion to allow the tea leaves to dance in the pot.

Let the leaves steep 1 min.

Empty the pot completely into the warmed pitcher and gently pour tea a little at a time into each warmed cup to ensure evenness.

For 3 or 4 more infusions, add more hot water to pot and adding 10 sec for each subsequent infusion.
